Our Professional Chef Instructors will lead you through this 4-day course aimed at those who seek to learn the foundations of classical and modern cuisine. During our workshops, we'll utilize a variety of ingredients as we experiment with and follow recipes.
We will begin by practicing basic techniques such as cutting, cooking, using sauces, and dish presentation before applying these newly acquired skills to the actual recipes we'll prepare in class. At the end of each class, we'll enjoy trying our creations, which will not only be a tasty treat, but also a great learning experience.
On the first day of the course you will learn cutting techniques, and prepare Caesar salad, Spanish omelette, veal fricassee, and as dessert, a fruit and vegetable soup with a creamy chocolate sauce. For the second day, we will focus on entrees, with rice and vegetables, broths, meat, poultry and seafood, paellas and risottos, lentils with chorizo, couscous with a poached egg, and for dessert a delicious caramelized milk.
The third day, you’ll learn technical basics of cooking in an oven, on a stove, and candying, as we prepare Sea Bass with black butter, capers and mashed pumpkin, twice cooked fillet with mushroom sauce, au gratin potatoes, and to top it all of, a tiramisu dessert. Finally, on the last day we will learn to make stews and sauces such as chicken with peas, vegetable stew with a fried egg and meat broth, Bolognese lasagna with a white sauce, and for dessert, a rich rice pudding.
